A Splash of Blueberries

Blueberry Cheesecake idea..

What could be better then Cheesecake & Blueberries in one dish.

This recipe looked so good to me, so I thought I would share it with you.

Did you know that blueberries are full of antioxidants, and vitamin C.

If your looking for a light and tasty recipe then give this one a try.

Recipe
2 Tablespoons sugar
2 teaspoons cornstarch
1 cup blueberries (fresh or frozen)
1/4 cup orange juice
2 cups flour
1/2 cup powdered sugar
1 cup butter
1 (8-ounce) cream cheese at room temperature
1/2 cup sugar
1 Tablespoon flour
2 eggs
2 teaspoons orange zest
1 teaspoon vanilla



In a saucepan add the sugar, cornstarch, orange juice. Cook for about 4 minutes until bubbly. Set aside.
In a mixing bowl mix butter, flour and powdered sugar. Mix until it looks crumbly.
Using a 9x13 pan..line with parchment paper or foil, add your crust and bake for 20 minutes.
While the crust is cooking mix together cream cheese, sugar, flour,eggs, vanilla, and orange zest.
Pour the cream cheese mixture over the hot crust, spoon in the blueberries over the cream cheese.
Then take a knife and swirl the blueberries into the cream cheese mixture.


Bake at 350 degrees for 20 minutes. Let you bars set for about an hour. Then refrigerate them for 20 minutes before cutting into. Sprinkle with Powdered sugar.

Summer Breakfast Idea

OPEN-FACED SANDWICH

Greetings to all my blogger friends,

I hope your summer has been full of relaxation, vacations, family time and lots of good cooking outside.

I love whoever invented a BBQ..that is the greatest idea!!!!

My summer has been filled with great memories, good summer concerts, corn on the cob, homemade ice cream, beach trips, drive in movies, meeting lots of really great people, and of course cooking some pretty amazing breakfast for our guest.

I am in  love....

I have come up with a very easy, light, and tasty idea for summer breakfast...An Open-Faced Sandwich.


I started serving this to our guest this summer at the B&B

It is so easy to put together!!

Whoever you serve this sandwich to, you will amaze them with this dish.

My recipe..makes 1 sandwich

A slice of Marble Rye Bread  ( toasted)
A thick slice of bacon   ( I use back bacon)
A thick slice of  Tomato
A 1/2 Cup of Arugula
1 Tablespoon of  Balsamic Vinaigrette
1 Fried Egg

Toast your bread first, layer a slice of bacon then a  tomato. Mix in a small bowl arugula & balsamic vinaigrette, add the arugula in a mound on top of the tomato. Fry one or two eggs, sprinkle with some salt & pepper, place the egg on top
Optional ideas...melting some cheese (fontina cheese) to your bread, or( cream cheese). Spinach is also a nice flavor for this sandwich if  you don't have arugula on hand.

To add even more to the plate, I love to serve some oven roasted dill potatoes.

This breakfast sandwich is healthy and super simple to make for your family or guest.

Life's a Peach

PEACH- BLUEBERRY COBBLER

Peaches....they have been on my mind lately.

WHY?? because it's peach season

I am super excited!!!    There are so many good peach orchards here in the Northwest. 

This year we are going to be on top of finding the best and cheapest Peach Farm. If you have a  peach farm that you would like to mention....that would be great.

I can tell you there isn't anything better then eating a fresh peach off a tree....letting the juices drip down your face.... so yummy!!  I know it sounds a little crazy.

This is a super yummy dish that is full of flavor and easy to make.

 The recipe is from Cooking Light

Ingredients
  • 5 pounds peaches, peeled, pitted, and sliced
  • 2 tablespoons fresh lemon juice
  • 1 cup granulated sugar, divided
  • 3/8 teaspoon salt, divided
  • 6 3/4 ounces (about 1 1/2 cups) plus 2 tablespoons all-purpose flour, divided
  • Cooking spray
  • 1 teaspoon baking powder
  • 1/2 cup butter, softened
  • large eggs
  • 1 teaspoon vanilla extract
  • 3/4 cup buttermilk
  • 2 cups fresh blueberries

Preparation

  • 1. Preheat oven to 375°.
  • 2. Place peaches in a large bowl. Drizzle with juice; toss. Add 3/4 cup granulated sugar, 1/8 teaspoon salt, and 2 tablespoons flour to peach mixture; toss to combine. Arrange peach mixture evenly in a 13 x 9-inch glass or ceramic baking dish coated with cooking spray.
  • 3. Weigh or lightly spoon 6.75 ounces flour (about 1 1/2 cups) into dry measuring cups; level with a knife. Combine 6.75 ounces flour, remaining 1/4 teaspoon salt, and baking powder in a bowl, stirring well with a whisk. Place the remaining 1/4 cup granulated sugar and butter in a medium bowl, and beat with a mixer at medium speed until light and fluffy (about 2 minutes). Add eggs, 1 at a time, beating well after each addition. Stir in vanilla extract. Add flour mixture and buttermilk alternately to butter mixture, beginning and ending with the flour mixture, beating just until combined. Stir in blueberries.
  • 4. Spread batter evenly over peach mixture; sprinkle with turbinado sugar. Place baking dish on a foil-lined baking sheet. Bake at 375° for 1 hour or until topping is golden and filling is bubbly.
We like it with some homemade Ice-Cream or whipping cream.

A Perfect Patio Dinner Idea

CAPRESE SALAD...


I love this recipe....rich red vine tomato's, fresh green basil and some good mozzarella cheese layered

with a drizzle of vinaigrette on top.

doesn't that sound so good.

A Caprese Salad is one of the simplest salads I know.

 I think serving this dish in the summer months is the best time, it's the perfect season

It's important to use the freshest vine tomato's you can find.... A Farmers Market would be a good place to buy vine ripened juicy tomato's & fresh basil with very large leaves. 

It's a perfect eating outside on your patio with your family idea.... A delicious Caprese Salad...there is no rules to assembling this dish..just layer your slices on top of each other on a plate anyway you want,

then drizzle some Balsamic Vinaigrette, or Olive oil and salt & pepper also makes for a tasty idea. 

I like to sprinkle a little Parmesan cheese on top of mine...then serve.

Crisp Sweet & Delicious!!!!

Sweet Corn Tomato's 

RECIPE
1 3/4 C fresh corn  ( grilled) or not
1 C Jasmine Rice cooked
1/2 Avocado
1/4 C chopped yellow pepper
1/4 C chopped green pepper
1/4 C chopped red onion
4 T Olive Oil
3 T Cilantro
21/2 t lemon juice
salt & pepper
1/2t cumin
6 Medium Vine Tomato's
Directions
  1. In a large bowl, toss all ingredients together — except tomatoes — and set aside. Slice tops off tomatoes and remove insides. Fill each tomato with 1/2 cup corn-rice mixture and serve.

Last night was our kick-off to Tunes On Tuesday..I am sorry if  you missed it. We had so much fun!! The music was great old 80's & 90's music with some good talent on stage singing.  It was amazing at about 6 oclock the clouds cleared out of Newberg and made for a very nice night.

We are very busy at the B&B this time of year..so I am always looking for a super simple recipe to throw together.

This recipe captures the season in which we are in..SUMMER.  It's crisp, sweet, lots of flavor and so easy.  
Remember to use the vine tomato's...they have so much more flavor I think. Also grilling your corn before adding it the dish would be good too.

If you are attending a reunion or potluck or gathering of any kind I think these would look great on the table.

The fun part about this recipe to me is, I can use all the vegetables I bought at our Local Farmers Market the other day. If you haven't been to one this summer I encourage you to find one in your area.

I really can't believe the 4th of July is around the corner, it has come way to fast for me.

I love the 4th of July...It wasn't always the case with me. I guess when I was very young the sound of fireworks scared me to my room with pillows over my head and lots if screaming. I was terrified!!!!   I love fireworks but I still could do without the sound of them..ear-plugs are must for me.

I think the funnest part of the 4th of July is the decorating for me.

I love the brilliant colors red...white....blue, so  I thought I would share some great ideas for you who love to cook or decorate for the 4th Of July.
