A Splash of Blueberries

Blueberry Cheesecake idea..

What could be better then Cheesecake & Blueberries in one dish.

This recipe looked so good to me, so I thought I would share it with you.

Did you know that blueberries are full of antioxidants, and vitamin C.

If your looking for a light and tasty recipe then give this one a try.

Recipe
2 Tablespoons sugar
2 teaspoons cornstarch
1 cup blueberries (fresh or frozen)
1/4 cup orange juice
2 cups flour
1/2 cup powdered sugar
1 cup butter
1 (8-ounce) cream cheese at room temperature
1/2 cup sugar
1 Tablespoon flour
2 eggs
2 teaspoons orange zest
1 teaspoon vanilla



In a saucepan add the sugar, cornstarch, orange juice. Cook for about 4 minutes until bubbly. Set aside.
In a mixing bowl mix butter, flour and powdered sugar. Mix until it looks crumbly.
Using a 9x13 pan..line with parchment paper or foil, add your crust and bake for 20 minutes.
While the crust is cooking mix together cream cheese, sugar, flour,eggs, vanilla, and orange zest.
Pour the cream cheese mixture over the hot crust, spoon in the blueberries over the cream cheese.
Then take a knife and swirl the blueberries into the cream cheese mixture.


Bake at 350 degrees for 20 minutes. Let you bars set for about an hour. Then refrigerate them for 20 minutes before cutting into. Sprinkle with Powdered sugar.
