Crisp Sweet & Delicious!!!!

Sweet Corn Tomato's 

RECIPE
1 3/4 C fresh corn  ( grilled) or not
1 C Jasmine Rice cooked
1/2 Avocado
1/4 C chopped yellow pepper
1/4 C chopped green pepper
1/4 C chopped red onion
4 T Olive Oil
3 T Cilantro
21/2 t lemon juice
salt & pepper
1/2t cumin
6 Medium Vine Tomato's
Directions
  1. In a large bowl, toss all ingredients together — except tomatoes — and set aside. Slice tops off tomatoes and remove insides. Fill each tomato with 1/2 cup corn-rice mixture and serve.

Last night was our kick-off to Tunes On Tuesday..I am sorry if  you missed it. We had so much fun!! The music was great old 80's & 90's music with some good talent on stage singing.  It was amazing at about 6 oclock the clouds cleared out of Newberg and made for a very nice night.

We are very busy at the B&B this time of year..so I am always looking for a super simple recipe to throw together.

This recipe captures the season in which we are in..SUMMER.  It's crisp, sweet, lots of flavor and so easy.  
Remember to use the vine tomato's...they have so much more flavor I think. Also grilling your corn before adding it the dish would be good too.

If you are attending a reunion or potluck or gathering of any kind I think these would look great on the table.

The fun part about this recipe to me is, I can use all the vegetables I bought at our Local Farmers Market the other day. If you haven't been to one this summer I encourage you to find one in your area.
