I was in the grocery store the other day and this recipe came to mind.
I wasn't sure if I tried in the past.
But I came home and started looking in on my recipe box. What do you know...I found it.
I cooked this recipe for my family last night. I asked each one of them to rate this dish for me on a scale of 1-10...they all gave it a 10.
This recipe is not difficult to make, just a little time consuming. I think it took me an hour from start to finish.

A few years ago my son was injured in a pool accident and had to have surgery. He wasn't able to work.
One day he came up with this great idea to make salsa and sell it locally.
Garrett would make huge batches the night before and sell them at the local Farmers Market. He became a favorite to alot of people.
If you don't have alot of time, you can buy salsa at your local grocery store. I know everyone has there own great salsa recipe...so go for it with this recipe.
Using the side of a meat mallet, pound out your chicken breast to 3/8 of an inch
spread Ceasar Salad Dressing on both sides.
Dip the chicken into seasoned bread crumbs and fresh basil. Cook in a pan drizzled with 2T of olive oil. You want the chicken to brown on both sides. It doesn't have to be cooked completely, it will finish in the oven.
Slice long pieces of Mozzarella Cheese over each piece of chicken.
Oven should be set at 350 degrees. Place your chicken in the oven and cook for 1/2 hour. Let the cheese melt, it should be slightly brown on top.
To finish the dish, take a few tablespoons of salsa and drizzle over the chicken. We like alot of salsa, but it is really up to you.
RECIPE
Serves 4
4 boneless skinless organic chicken breast
2 T olive oil
salt and pepper
1/1/2 c of seasoned bread crumbs
1/4 c of basil
1/2 c ceasar dressing
4 thick slices of mozzarella cheese
Heat oven to 350 degrees.
Mix bread crumbs and salt and pepper and basil together in a bowl. Rise you chicken first. Pound out your chicken between saran wrap with your meat mallet.
Spread Ceasar dressing over both sides of your chicken...then dip into the bread crumbs. Place all 4 pieces of chicken into your heated pan and cook on each side for about 8 minutes on med-low heat.
Then transfer onto a baking sheet. Place a slice of mozzarella cheese on each piece of chicken and cook in the oven until cheese is melted.
To finish it off...two spoonfuls of salsa drizzled over the top.
