Swedish Pancakes

Sauteed Apple Swedish Pancakes

This recipe is dedicated to my long time friend Deanna.

Many years ago while staying with my friend Deanna she introduced us to these tasty little pancakes.

We instantly fell in love with them.   

I decided to put my touch on them and add some Sauteed Apples.




                                                                       
For the first step, cut up your apples into slices.   

Heat your cast iron skillet on medium. 

Add a T unsalted butter, 1T brown sugar, and 1/2 T cinnamon, add your apples.

Cook until they are tender.

First start with mixing your 4 eggs, 2c milk, 2 C flour, 3T olive oil, 1T sugar, 1/2 t salt. 

There shouldn't be any lumps.

Heat a medium size skillet with 1/2t of oil.    

Pour about 1/3 C of your batter into the middle of the pan.  Then pick up the pan and roll the batter around the pan as seen in the picture....you want them to be light and fluffy!!!

Cook for about a minute, then flip them over and  cook for 1 minute.  Remove and set them on a plate. 

Finish using all your batter.

                                                     There you go...its that simple.  

Take one pancake and with your filling...add a spoonful to the middle.

Roll them up and place them on your plate, or you can also stack them and add the filling to the top.

Add your favorite syrup or sprinkle some powdered sugar.

The great thing about these is you can put them in the freezer for another time.

  Microwave to heat them up.
