PEANUT BUTTER BANANA BREAD

I wanted to bake a great bread to give to a friend..this was my pick

If you don't fall in love with this bread, then there is something seriously wrong.

It is so good!!!

I love baking any kind of bread!!  the aroma that is in my house right now is heavenly

Can I tell you..this bread is so moist and crunchy...adding the chopped peanuts is a good thing!!

 RECIPE      Adapted from Cooking Light


1-1/2  C banana's mashed

1/3 C  non-fat plain yogurt

1/3 C creamy all natural peanut butter

3 T melted butter

2 eggs

1/2 C sugar

1/2 C brown sugar

1 C wheat flour

1/2 C of all purpose flour

1/4 C flaxseed meal

3/4 t baking soda

1/2 t salt

1/2 t cinnamon

1/8 t allspice

1/4 C dry roasted peanuts chopped

Place your rack in the center of you oven and preheat to 350 degrees

Grease and flour your 9x5 loaf pan, set aside


In a bowl mix together, the banana's, peanut butter, yogurt and melted butter.

Add the eggs and sugars and mix. No lumps!


In a large bowl, add your flours, flaxseed meal ,baking soda, salt, cinnamon, and allspice.

Pour your wet mixture into the dry mixture.  Fold together with a spatula.

add your chopped nuts.   Pour the batter into your bread pan and bake for 55 to 60 minutes
Make sure your bread is done in the middle.

Remove from the oven and let cool for 20 minutes before slicing.
